Raw Raspberry Cheese Cake

This bright colored cake was served at my friends birthday dinner. It’s not only lovely to look at but also insanely tasty! It’s easy to make and you don’t need that many ingredients. OBS there is no cheese in it. Aprox time of preparation: 20 min.

Bottom

2 cups/125g nuts (peanuts, walnuts, hazelnut, almonds, chooze one or mix different)

1 cup/80 g fresh dades

Some sea salt

1/2 tsp cardamom (optional)

1/2 tsp cinnamon (optional)

Some ginger spice and/or real vanilla powder (optional)

 

Top

3 cups cashew raw and soaked

70gr raw coconut oil

Zest and juice from one lemon

3 cups fresh or frozen raspberry

2 cups fresh or frozen strawberry

2 tsp agave nectar

Mix all ingredients for the bottom, spread in a cake form and put in the freezer. Mix all the top ingredients and spread on the bottom layer, put back in the freezer for 3 hours.
