Low carb veggie pizza

Made this pizza for lunch, since I’m starting with The Raw Food diet on monday. This will be my last warm meal and it was surprisingly good. Never made a pizza from potatoes and carrots before.

Ingredients for the pizza base: 200 g sweet potatoes, 100 g carrots, 1 egg white, 4 tablespoons almond flour, salt and pepper

For tomato sauce: 2 tomatoes, garlic, pepper, salt, thyme, basil, oregano or other spices.

1. Pizza base: Boil the sweet potato and carrots until tender, about 20 min. Mash or blend the potatoes and carrots. Mix in the remaining ingredients and mash together. Spread the batter on a baking sheet. Bake in the oven at 180 degrees for about 20 minutes.

2. Tomato sauce: Put 2 tomatoes in a blender, add garlic and the spices. Taste the sauce.

3. Put the sauce and the filling of your choice on the pizza base. Example of fillings: slices of zucchini, aubergine, feta cheese, onion, spinach, vegan cheese, mushrooms.
4. Bake the pizza until nicely browned, 15 min. Strew some rucola and seeds on top.
