Crunchy buckwheat bars

Perfect for take away, something to eat on the go. Made these this morning, delicious!

2 cups buckwheat
150 g of dates
2 dl of water
1 cup pumpkin seeds
1/2 tsp salt
50 g coconut flakes
2,5 cup sunflower seeds

0,5 dl dried blueberries
2 tbsp lime juice

Soak buckwheat for one day, germinate for 2 days so they get small tails. Wipe the sprouts in the 10-14 hours at 40- 50 celsius/100-122 F. Put it on the lowest temperature and glade on the oven door. The grains need to be dry. Soak the dates in 2 cups of water. Save the water!

Mix pumpkin seeds and salt to a flour. Add the dry ingredients, except buckwheat, in a blender. Add the water, dates and lime juice. Mix until it’s smooth. Add the mixture into a bowl and add the buckwheat.

Make the cakes by pressing them down in a round baking tin/spoon. Turn the cakes into the breading. Place on a baking sheet. Dry in oven at 40-50 C. Turn the cakes after 4h. Bake for a further 4 hours. The cookies should be completely dry.
The cookies are only fresh for a few days in room temperature. Freeze the part you dont want toeat at once, before drying them completely in oven.

groddatbovete

2 dl bovete, 150 g dadlar, 2 dl vatten, 1 dl pumpafrön, 1/2 tsk salt, 50 g kokosflingor, 2,5 dl solrosfrön, 0,5 dl torkade blåbär, 2 msk pressad lime.

Blötlägg bovete i 1 dygn och grodda sedan i 2 dagar för att få en liten svans. Torka groddarna i 10-14 timmar på 40- 50 grader. Grynen ska bli så torra att de nästan går att smula sönder. Blötlägg dadlar i 2 dl vatten. Spara vattnet!

Mixa Pumpafrön och salt till ett mjöl att panera.
Lägg alla torra ingredienser, utom bovetet, i en mixer. Tillsätt vattnet som dadlarna har legat i, dadlar och limesaft. Mixa detta till en jämn smet. Lägg smeten i en bunke och blanda ner bovetet.

Gör kakorna genom att pressa ner smet i en rund kakform/sked. Rulla ut några kakor i taget och vänd dem i paneringen. Placera på en bakplåtspapper. Torka i torkugn eller vanlig ugn på 40-50 grader. Vänd kakorna efter 4h. Låt stå i ytterligare 4h. Kakorna ska vara helt torra.
Kakorna håller sig endast några dagar i rumstemperatur. Så frys in resten innan du torkar ut de helt.
